Roasted Fall Veggies are a quick, easy, affordable, and healthy way to get nutrients in! Below is a list of good roasting veggies. Pick your favs!


Roasted veggies are beautiful, delicious, and almost soul food level for these cold winter months!
Good Veggies for Roasting:
White potatoes
Sweet potatoes
Bell Peppers
Carrots
Zucchini
Tomatoes
Celery
Brussel Sprouts
Onions
Whole Garlic Cloves
Broccoli
Cauliflower
Turnips
Mushrooms
Asparagus
Eggplant
Leeks
Green beans
Beets
Winter Squashes (butternut, acorn, spaghetti squash, pumpkin, etc.)
1) Chop the veggies into cubes, toss with avocado oil, season with salt (and other seasonings as desired)
2) Get a pan or two, spread out your veggies you want to eat for the week, roast your veggies
3) Cook for 40 minutes at 425, or until slightly browned!
4) Eat immediately, or after veggies have cooled, place your prepared food in a large container, store in your fridge and have ready to go yummy veggies for the week. This is a favorite time saving hack of mine.

Pro tip for winter squash: Cut squash in half, remove seeds, use a fork to poke holes on the skin side, and cook either inside down on pan or inside up with butter inside for flavor. Scoop the squash out of the skin when you're ready to eat it!
Eating healthy doesn't have to be expensive or time consuming. It can be flexible, fun, beautiful, creative, and life giving. With practice, you will find the routine that works best for you.
